Parmesan Roasted Red Potatoes

It's no secret that we're a meat and potato family. Hey, we're Iowans! Whenever we're stumped for sides, my husband almost always defaults to one of our easy favorite potato recipes. Don't get me wrong, they're all tasty but sometimes you just need a change of pace. This was SUCH a good, yet still easy, roasted potato side. It had tons of terrific flavor with just enough crunch.

Ingredients:



  • 1 TBSP dried basil (use fresh if you want, but this is what I had)

  • 1 TBSP dried thyme (same story as above)

  • Olive oil

  • 1 cup grated parmesan cheese

  • 2 tsp seasoned salt (I love Lawrys!)

  • 2 lbs baby red potatoes

  • Red pepper to taste

Directions:



  • Preheat the oven to 425 degrees.

  • Wash and cut the potatoes into small cubes. Throw the cubes in a bowl, drizzle with olive oil, toss to coat.

  • Add basil, thyme, seasoned salt, and red pepper and toss the mixture to coat evenly.

  • Place coated potatoes in a baking pan. I put them on parchment paper in the baking sheet so that they wouldn't burn, but if you have a cookie sheet you trust then you can skip this step ;)

  • Add half of the grated cheese on the potatoes and place them in the oven for 30 minutes.

  • Take the potatoes out and add the remaining grated parmesan cheese. Place them back in the oven for another 15-30 minutes depending on your desired doneness/crunch factor.

Not exactly a mind blowing recipe but you will be amazed and how delicious these simple roasted potatoes are. Great with steaks, chicken, anything really!
