Easy Kisses Macaroon Cookies

'Tis the season for some holiday treat trays! I love spreading Christmas cheer to my neighbors in the form of delicious baked goods. Just what everyone needs, right? More junk food! But hey, with what seems like a steady flow of guest traffic it is nice to have things on hand when folks stop by. And even better if you don't have to do the baking for it! So I geared up for a weekend of baking so I could make sure my neighbors were armed with enough goodies to keep guests happy. Some were classics, some were new things. One of the new things I made was these super easy and delicious macaroons.

Ingredients:
  • 1 pouch of Betty Crocker sugar cookie mix (I've said it once, I'll say it again... I am NOT above making things using the help of a box/bag mix!)
  • 1 stick butter or margarine, softened
  • 1 egg
  • 1 tsp fresh grated orange peel (optional)
  • 4 cups sweetened coconut flakes
  • Hersheys kisses

Directions:

  • Preheat oven to 375 degrees.
  • In a bowl, stir together cookie mix, butter, egg and, if desired, orange peel until soft dough forms. Mix in two cups coconut.
  • Shape dough into 1 inch balls. Roll balls in remaining coconut; place on ungreased cookie sheet.
  • Bake 10-12 minutes or until the edges of cookies are lightly browned.
  • Cool slightly; press on kiss into center of each cookie.
  • Remove from cookie sheet to wire rack and let cool completely.

Doesn't get much easier than that. And I do love any chocolate/coconut combination. Merry Christmas everyone!
