Ingredients:
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup Mini Chips Semi-Sweet Chocolate Chips
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 medium ripe bananas, mashed
- 1/2 cup mayonnaise
- 6 maraschino cherries, halves
- Extra marachino cherries chopped up into little bits
Directions:
- Preheat oven to 375°
- In a bowl, combine flour, sugar, chocolate chips, baking soda and salt. In another bowl, combine bananas, chopped cherry bits, and mayonnaise. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups three-fourths full.
- Press a cherry half, cut side down, into the top of reach muffin.
- Bake for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
My husband, the self-proclaimed chocoholic, doesn't like chocolate chip muffins OR pancakes... but even HE liked these!
On an unrelated and perhaps inappropriate note, wouldn't these have been great for Bake For Hope? I think you see where I'm going with this one.
You know how there is always a liiiiiittle bit left in the bowl after filling all of your muffin cups? Well don't throw it out! Make some minis! Bite-sized banana split muffins, perfect for popping in your mouth on the way out the door in the morning.

Wow, these are so cute with those little cherries on top! I've never baked with mayo but keep seeing mayo chocolate cakes around - does it make the muffins really moist?
Kertin - YES! It does! I was super freaked out by the mayo idea at first. But like you, I've seen too many amazing recommendations for using it not to give it a try.
What a great looking muffin! If it's little and in muffin form it has to be good for you...right.... :)
