Meatloaf Cupcakes

Some people really dislike food that looks like other food. I, on the other hand, LOVE it. I think it makes dinner more fun! Wouldn't meatloaf cupcakes be a great dinner for April Fools Day? They're bite sized, easy to make, and most of all... adorable! These would be great for kids too. Or you could freeze them so that you can have single serving meatloaf later in the week!



Ingredients:


  • 1 pound lean ground beef

  • 1/2 cup seasoned bread crumbs

  • 1 cup grated Monterey Jack cheese

  • 3 tablespoons ketchup

  • 1 egg

  • 1/2 teaspoon celery salt

  • 1/4 teaspoon pepper

  • 3 cups of mashed potatoes (used your favorite recipe or instant!)

  • Food coloring

Directions:



  • Heat the oven to 375 degrees. Line 12 muffin tin cups with foil bake cups.

  • In a large bowl, mix together all of the meat loaf ingredients until well combined. Divide the mixture evenly among the lined cups (the liners should be about three quarters full).

  • Place the filled muffin tins on cookie sheets and bake the cupcakes for about 15 minutes or until cooked through.

  • Take mashed potatoes and add food coloring (whatever color you like!) until you get the desired 'frosting' color. Swirl on the frosting and enjoy!
I took off the wrappers before I took this photo. They looked MUCH cuter with the cupcake liner still on it. So if you're going to make them, I suggest serving them in the liner. It makes more sense as a cupcake that way.

I will admit, I didn't love the flavor of this meatloaf. I think I know why though... I was out of breadcrumbs. Yep, so I looked through my pantry and came up with this as an alternative:

Rye Tricuits? It was the closest thing I could think of so I threw some in a bag, smashed with a rolling pin, and gave it ago. Like I said, the recipe was a little off. Could have been the Triscuits, could have just been a bunk recipe. Either way, the decorating is super fun!

This is very creative! I really like these because they're easy portion control. I had to do a double take at those mashed potatoes. haha
