Ingredients:
- 1 pound lean ground beef
- 1/2 cup seasoned bread crumbs
- 1 cup grated Monterey Jack cheese
- 3 tablespoons ketchup
- 1 egg
- 1/2 teaspoon celery salt
- 1/4 teaspoon pepper
- 3 cups of mashed potatoes (used your favorite recipe or instant!)
- Food coloring
Directions:
- Heat the oven to 375 degrees. Line 12 muffin tin cups with foil bake cups.
- In a large bowl, mix together all of the meat loaf ingredients until well combined. Divide the mixture evenly among the lined cups (the liners should be about three quarters full).
- Place the filled muffin tins on cookie sheets and bake the cupcakes for about 15 minutes or until cooked through.
- Take mashed potatoes and add food coloring (whatever color you like!) until you get the desired 'frosting' color. Swirl on the frosting and enjoy!
I will admit, I didn't love the flavor of this meatloaf. I think I know why though... I was out of breadcrumbs. Yep, so I looked through my pantry and came up with this as an alternative:
Rye Tricuits? It was the closest thing I could think of so I threw some in a bag, smashed with a rolling pin, and gave it ago. Like I said, the recipe was a little off. Could have been the Triscuits, could have just been a bunk recipe. Either way, the decorating is super fun!
