Crockpot Party Potatoes

I knew that I wanted a hot (temperature wise) dish at the Baptism lunch also but I wasn't sure what that would be. A friend passed on a recipe for "Party Potatoes". I didn't want to worry about having to come home and cook something after church so I adapted it to the crock pot. Who knew it would be such a hit! This makes a lot, but there were barely any leftovers. And what was leftover was eaten by me for lunch the next two days. This would be a fantastic side for breakfast, lunch, or dinner! Ingredients:

  • 2 lb frozen hash browns (I used Ore Ida's Peppers and Onion hash browns)

  • 3/4 stick of butter or margarine, cut into pieces

  • 1 cup sour cream

  • 1 can cream of mushroom soup

  • 1/2 shredded cheese (I used a three cheese blend but anything would work!)

  • Salt & Pepper to taste

Directions:



  • In your crockpot, combine all of the above ingredients. Stir to mix.

  • Heat on high for 30 minutes, then low for 2-3 hours.

That's IT. This worked out perfectly. Not only was it one of the easiest crock pot potato dishes I've ever had but the timing was exceptional! I mixed everything together right away in the morning, put it on high while I got us ready. Turned to low while we were off to Mass/baptism. When I got home I gave it a few stirs and let everyone dig in.
