In an effort to keep things easy to eat and delicious, I found this recipe for a new spin on an old classic. Who doesn't love pinwheels! I've made them before but adding salsa and ranch? Oooh I had to try these! These were another installment to my girlfriend's baby shower.
Ingredients:
- 10 large flour tortillas
- 1 cup chopped veggies - I used red & green peppers, onion, and green & black olives.
- 1.5 blocks cream cheese, softened
- 1 package dry ranch dressing mix
- 1/4 cup salsa
- Shredded mozzerella
Directions:
- Mix cream cheese with ranch mix and salsa (I would add ranch mix TO TASTE. This was a little salty for me, so I ended up adding more cream cheese and salsa to balance it out. The first time I made them it was TWO package of cream cheese, not one. Personal preference though!)
- Spread mixture onto tortilla; top with chopped veggies and cheese.
- Roll and place in a casserole dish and refrigerate for at least 6 hours. Mine were in overnight.
- Chop off the end of each tortilla and discard; chop tortilla into bite sized pieces and serve. Each tortilla should give you 6-8 pieces.
These were great! And like I said, who doesn't love pinwheels?! I would suggest doing the salsa and ranch to your personal preference though. Besides, it gives you a good excuse to dip a chip into that yummy mixture to test ;)

It's been a long time since I've had pinwheel rollups. I need to make some soon - they'd be a good after school snack.
