Dessert Egg Rolls

Every once in awhile Drew gets these big blue puppy dog eyes and says, "Can we please have egg rolls? Pretty please?" They're a snap to make but they just take a little bit of time, so in his mind they're a big deal. I don't tell him otherwise of course ;)

So I'm 'slaving away' in the kitchen and the egg rolls were again, very tasty. But I had four leftover wrappers and no more filling. What's a girl to do? I'm not going to save them, that's for sure, but I hate to waste them also.

Then I remembered that I had some raspberry pastry filling leftover from my final Wilton cake. So I slapped some of that on the egg roll wrapper, added a few slivers of almond, rolled up and fried.

Believe it or not, these turned out tasty! Crunchy on the outside, ooey-gooey on the inside:
