Très Magnifique Chicken!

My brother has raved about Herbes De Provence and it's culinary uses. In an effort to consistently try new recipes, I thought it was time to try a new flavor as well! So while at the store, I picked up a Spice Island bottle of this yummy new (to me) mixture. I took the cap off and it smelled wonderful! I'm quite sure that this chicken is the closest I will get to South of France anytime soon ;)

Ingredients:
  • 2 boneless, skinless chicken breasts
  • 1 cup of all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1 large egg, lightly beaten
  • 1 1/2 cup panko bread crumbs
  • 2 teaspoons herbes de provence

Directions:

  • Preheat your oven to 375 degrees
  • Spray your 9 x 13 baking dish with Pam (or whatever you choose)
  • Line up three bowls for your chicken coating process
  • Bowl One has the mixture of flour, salt, and pepper
  • Bowl Two has your lightly beaten egg
  • Bowl Three has a mixture of panko and herbes de provence
  • First dip your chicken breast in the flour mixture, then the egg, and then the panko. Lay that chicken breast in your baking dish. Repeat with second chicken breast
  • Bake uncovered for 40 minutes (Turn chicken over half way through)

And there you have it! My first experience with Herbes De Provence was a success! The chicken was perfectly crisp and the herb mixture was a light and delicious accent. I will definitely be experimenting with this some more.
