Ingredients:
- 6 new potatoes
- 1/8 cup of olive oil
- 1 TBSP mayo
- 2 cloves of garlic, pressed
- 1/2 TBSP Italian seasoning
- Salt and pepper to taste
Directions:
- Preheat oven to 375 degrees
- Cut the potatoes into smaller pieces (I cut them in half and then again in thirds)
- Mix all of your ingredients together and be sure that all potatoes are coated well
- Throw potatoes in a pan and cook for 30 -40 minutes, stirring occasionally
- Once golden brown, remove from the oven and serve
YUM YUM YUM! These were a great change of pace. If you're looking for a very easy potato side that has a great flavor, give these a shot. They were fantastic! We had them along with our Très Magnifique Chicken the other night.

mmmm, these look so good! I saw them in the picture with your tres ma. chicken the other day and was going to ask you for the potato recipe. I am so glad you blogged them!
My DH loves potatoes and I'm always on the look-out for new recipes.
I think any recipe with the word, "aioli" in it automatically makes you sound like a 5-Star Chef.
