Roasted Aioli Potatoes

If you take a look at the various posts in my blog, you will see that almost all of my main dishes come with some type of heavy carb on the plate next to it. It's awful, I know. But I have a husband who works out like a fiend and apparently has a hollow leg. His favorite starchy side are my mexi fries, but I just can't eat those all the time. So when I stumbled upon a new potato option I knew I had to try it!

Ingredients:

  • 6 new potatoes
  • 1/8 cup of olive oil
  • 1 TBSP mayo
  • 2 cloves of garlic, pressed
  • 1/2 TBSP Italian seasoning
  • Salt and pepper to taste

Directions:

  • Preheat oven to 375 degrees
  • Cut the potatoes into smaller pieces (I cut them in half and then again in thirds)
  • Mix all of your ingredients together and be sure that all potatoes are coated well
  • Throw potatoes in a pan and cook for 30 -40 minutes, stirring occasionally
  • Once golden brown, remove from the oven and serve

YUM YUM YUM! These were a great change of pace. If you're looking for a very easy potato side that has a great flavor, give these a shot. They were fantastic! We had them along with our Très Magnifique Chicken the other night.

mmmm, these look so good! I saw them in the picture with your tres ma. chicken the other day and was going to ask you for the potato recipe. I am so glad you blogged them!

My DH loves potatoes and I'm always on the look-out for new recipes.

I think any recipe with the word, "aioli" in it automatically makes you sound like a 5-Star Chef.
