Beer Battered Tilapia

We eat a lot of chicken dishes. I mean a LOT. So it's always nice to try something new that doesn't involve chicken. It just so happens that I had some tilapia in the freezer that I wanted to use up. I don't cook with fish very much so I didn't really trust my baking/grilling skills (or lack their of) when finding a recipe.

So what's a girl to do? FRY IT, BABY! So I found an extremely simple beer batter recipe and gave it a whirl!

Ingredients:

  • Tilapia filets
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup of beer
  • Vegetable oil for frying

Directions:

  • In a large bowl, combine flour, baking powder, and salt. In another bowl blend your egg and beer together, then quickly stir into the flour mixture.
  • Don't worry if the batter is a little lumpy
  • Heat oil (about 1/4 to 1/2 inch in a skillet) in a frying pan until extremely hot*
  • Now lightly dust your tilapia filets and dunk into your beer batter mix
  • Fry until golden and crisp, then drain on paper towels

This batter was exceptional! And I can't believe how easy it was. Did you see my little * above regarding the hot oil? Here is a trick for you. To test if the oil is hot enough, drip one little drop of water into the pan of oil. If the oil pops and crackles it's ready to roll!

This batter would be great for onion rings too! Mmm, onion rings...

I don't cook with fish a lot, either. So, I know how you feel about not trusting your baking/grilling skills. However, your post has convinced me to try this recipe. It looks delicious! Great job!

I just tried this batter recipe for some chicken thighs. I made it with some homemade tartar sauce (my gf's recipe). My roommate tried it, then went to the freezer, handed me four frozen halibut fillets, and said "cook this". Haha!

I used Deschutes' obsidian stout for the beer too, the batter was really dark, but it added a lot of good flavour. Thanks for this recipe!

I DO cook a lot of fish, mostly salmon, which my family is a big big fan of. I wanted to try something different, kinda fish-n-chipsy, with tilapia, and WOW. The batter puffed up beautifully, and it had a nice mild beer flavor. Really GREAT...My fam now requires me to make it again! We had it with cornbread, cole slaw, and aspargus. Thanks a bunch!
