Super Easy Pineapple Upside-Down Cake

Okay so I cheated a little and used cake mix from a box... but this was still a great cake! It was my first time making it so I wasn't sure how I would like it, but it was delish. I took it in to my office and my coworkes enjoyed it too!

Ingredients:
  • 1 package of yellow cake mix (I used Pillsbury)
  • 1 cup light brown sugar, packed
  • 1 stick margarine
  • 1 can pineapple slices

Directions:

  • Mix yellow cake mix as directed on the package, using juice from the pieapple instead of water (add water to make up additional amount if necessary)
  • Melt butter and brown sugar over low heat in a large pan
  • Place pineapple rings onto lightly greased 9x13 pan
  • Pour cake batter on top of rings
  • Bake at 350 for 1 hour
  • Let stand for 5 minutes and then flip over onto cooling rack

Tangy and sweet! Yum!
