Pizza Chicken Roll-up

We only had about 45 minutes until we were expecting guests and we still hadn't had dinner. Drew suggested we just order pizza but OH-NO! I am NOT letting Domino's steal my thunder! I decided to put my culinary skills to the test and whipped up a healthy alternative:

Ingredients:
  • Two boneless, skinless chicken breasts
  • Sliced pepperoni (I use turkey pepperoni... less fat!)
  • Cheese (I had shredded parmesan in the fridge, but use what you like)
  • Extra virgin olive oil
  • Italian seasoning

Directions:

  • Between wax paper, pound out the chicken breasts until thin
  • Layer with desired amount of pepperoni
  • Now layer with desired amount of cheese
  • Roll up the chicken and place it seam side down in a greased baking pan
  • Drizzle chicken with EVOO and sprinkle with italian seasoning
  • Bake at 325 for 30 minutes or until done

Even The Hubs was impressed that I managed to whip this up before company arrived. And the kitchen was clean before the door bell ever rang ;)
