Ingredients:
- Two boneless, skinless chicken breasts
- Sliced pepperoni (I use turkey pepperoni... less fat!)
- Cheese (I had shredded parmesan in the fridge, but use what you like)
- Extra virgin olive oil
- Italian seasoning
Directions:
- Between wax paper, pound out the chicken breasts until thin
- Layer with desired amount of pepperoni
- Now layer with desired amount of cheese
- Roll up the chicken and place it seam side down in a greased baking pan
- Drizzle chicken with EVOO and sprinkle with italian seasoning
- Bake at 325 for 30 minutes or until done
Even The Hubs was impressed that I managed to whip this up before company arrived. And the kitchen was clean before the door bell ever rang ;)
