Crock pot french dip

Oh boy. This meal was AWESOME. And it was oh-so-easy to throw together. In fact, I just threw it all in the crock pot over lunch!

Ingredient:
  • Roast (I think ours was around 2 or 3 pounds)
  • One packet dry onion soup mix
  • 1 can of french onion soup
  • Veggies - Onion, green pepper, mushrooms (I had some veggie leftovers in the fridge so I decided now was the time to use 'em up!)
  • Beef broth
  • Hoagie rolls
  • Cheese (whatever you like is what you should use)

Directions:

  • I put about 1/3 can of beef broth in the bottom of the crock pot.
  • Toss in veggies (whatever you like and however much you want)
  • Rub dry onion soup mix all over roast
  • Place roast in the crockpot on top of the veggies
  • Dump french onion soup over the entire roast
  • Cook on low for at least 6 hours until meat is tender
  • Shred roast, place meat and veggies on hoagie bun and top with cheese (I put ours under the broiler in the toaster oven for a few minutes to melt the cheese)
  • Use left over broth as au jus and ENJOY!

(and yes, we sometimes eat in the living room while watching our favorite shows... where is the crime in that?!)
