Chicken Fried Chicken

Drew was craving Rock Bottom the other night. Every month or so he pines for their Chicken Fried Chicken. I have to admit, it is pretty good. But because I'm trying to be more adventurous in the kitchen, I offered to make it instead. So here we go!

Ingredients:

  • 3 boneless, skinless chicken breasts
  • 1 egg
  • 1/2 cup of milk
  • 2 cups all-purpose flour
  • Cooking oil
  • Salt, pepper and paprika, to taste

Directions:

  • Beat together the egg and milk, set aside
  • Sprinkle desired amount of salt, pepper and paprika on both sides of the chicken breasts
  • Dredge the chicken breasts in the flour, shaking off the excess
  • Then dip each piece in the egg/milk mixture, then back in the flour again
  • Set chicken pieces aside on a piece of wax paper
  • Heat oil in a large skillet over medium-high heat for a few minutes (oil should be 1/2 inch deep)
  • Once oil is hot enough, carefully place chicken breast into the hot oil
  • Fry chicken breasts on both sides, turning once, until golden brown
  • Reduce heat to low, cover and cook 15-18 minutes until chicken pieces are done through
  • Drain on paper towels

Serve with your choice of side (gosh we are on a fry kick! Bad bad bad!) and gravy. Or if you're like me, smothered in gravy... mmmmm!
