
Ingredients:
- 3 boneless, skinless chicken breasts
- 1 egg
- 1/2 cup of milk
- 2 cups all-purpose flour
- Cooking oil
- Salt, pepper and paprika, to taste
Directions:
- Beat together the egg and milk, set aside
- Sprinkle desired amount of salt, pepper and paprika on both sides of the chicken breasts
- Dredge the chicken breasts in the flour, shaking off the excess
- Then dip each piece in the egg/milk mixture, then back in the flour again
- Set chicken pieces aside on a piece of wax paper
- Heat oil in a large skillet over medium-high heat for a few minutes (oil should be 1/2 inch deep)
- Once oil is hot enough, carefully place chicken breast into the hot oil
- Fry chicken breasts on both sides, turning once, until golden brown
- Reduce heat to low, cover and cook 15-18 minutes until chicken pieces are done through
- Drain on paper towels
Serve with your choice of side (gosh we are on a fry kick! Bad bad bad!) and gravy. Or if you're like me, smothered in gravy... mmmmm!
