Bleu Bruschetta

Mmmm, bruschetta. I love this crunchy snack. I could eat tasty little appetizers as meals almost every night of the week! Fortunately for Drew (and my hips) we don't :)

There is nothing impressive about this recipe but it ended up so good! It was all things that were already around the kitchen, dumped together, and served!

I took one can of diced tomatoes and tossed them with balsamic vinigrette and basil. Since I didn't have any feta in the fridge, I reached for the bleu cheese. This ended up being a really neat treat when eaten with the tomatoes! I spread the bleu cheese on a small piece of toasted garlic bread and then added a scoop of my tomato mixture... delish!
